Ingredients
- 2 boneless, skinless chicken breasts, cut into cubes
- 8 oz linguine pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper, to taste
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/4 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 1/4 cup heavy cream
- 1 tablespoon Dijon mustard
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook until al dente according to package instructions. Reserve 1/4 cup of pasta water, then drain and set aside.
- In a large skillet over medium heat, heat the olive oil and 1 tablespoon of butter. Add the cubed chicken and season with garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the softened butter over medium heat. Add the chicken broth, heavy cream, Dijon mustard, and crushed red pepper flakes (if using). Stir to combine and let the sauce simmer for 2-3 minutes.
- Add the cooked chicken back to the skillet, along with the cooked linguine. Toss to coat the pasta and chicken in the sauce. If the sauce is too thick, add the reserved pasta water a little at a time until the desired consistency is reached.
- Stir in the grated Parmesan cheese, chopped parsley, and lemon juice. Adjust seasoning with additional salt and pepper, if needed.
- Serve immediately, garnished with extra parsley and Parmesan cheese, if desired.
Notes
- Adjust the spice level to taste by altering the amount of cayenne and red pepper flakes.
- Use freshly grated Parmesan for the best flavor.
- This dish is best served fresh, as the sauce may not hold up well to freezing.
