Description

Ingredients

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • 1 egg
  • 1/3 cup bread crumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tbsp lemon juice
  • 1/4 cup crumbled feta
  • Fresh dill, optional for garnish

Instructions

  1. Mix ground chicken with garlic, parsley, oregano, lemon zest, egg, bread crumbs, salt, and pepper until just combined.
  2. Form small meatballs and brown them in a large skillet with olive oil until golden on all sides. Remove and set aside.
  3. In the same skillet, toast the orzo until lightly golden.
  4. Pour in chicken broth and bring to a simmer, stirring occasionally until orzo is tender and creamy.
  5. Add lemon juice, return meatballs to the pan, and simmer until fully cooked through.
  6. Top with crumbled feta and fresh dill before serving.
