Description

A luxurious and creamy fruit salad combining sweet peaches, pineapple, marshmallows, and a velvety vanilla pudding dressing, perfect for potlucks or nostalgic dessert cravings.


Ingredients

  • 1 can (15 oz) sliced peaches, drained and chopped
  • 1 can (8–20 oz) crushed pineapple, drained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 container (8 oz) whipped topping (like Cool Whip)
  • 1 cup mini marshmallows
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans (optional)
  • ½ cup sour cream
  • ½ teaspoon vanilla extract

Instructions

  1. Drain the peach slices and chop into bite-sized pieces. Drain the crushed pineapple well.
  2. In a large bowl, whisk together the vanilla pudding mix, whipped topping, sour cream, and vanilla until smooth.
  3. Gently fold in peaches, pineapple, marshmallows, coconut, and pecans until evenly coated.
  4. Cover and refrigerate for at least 2 hours (or overnight) to let the flavors meld and the texture firm up.
  5. Scoop into a bowl and garnish with extra coconut or pecans if desired before serving.
