Description

Hearty and flavorful Slow Cooker Cowboy Beans loaded with three types of beans, savory bacon, and ground beef. This easy and filling recipe is perfect for chilly weather, holiday gatherings, potlucks, and game day celebrations.

Ingredients

Meat and Protein

  • 16 ounces lean ground beef
  • 12 ounces bacon

Vegetables and Beans

  • 1 onion, diced
  • 16 ounces canned kidney beans, drained and rinsed
  • 16 ounces canned white beans, drained and rinsed
  • 32 ounces pork 'n beans

Seasonings and Sauces

  • 1 cup ketchup
  • ¼ cup brown sugar
  • 1 to 2 tablespoons liquid smoke

Instructions

  1. Brown the Ground Beef: In a large skillet, cook the lean ground beef over medium-high heat until browned. Drain excess fat and set the beef aside.
  2. Cook the Bacon: Add the bacon pieces to the same skillet and cook for 5 to 7 minutes, stirring frequently until fully cooked and crispy.
  3. Sauté the Onions: Add the diced onions to the skillet with the bacon and cook for an additional 4 to 5 minutes until the onions become soft and translucent.
  4. Combine Ingredients in Slow Cooker: Transfer the browned beef and bacon-onion mixture into a large 6-quart slow cooker. Add the pork 'n beans, drained kidney beans, drained white beans, ketchup, brown sugar, and liquid smoke to the slow cooker.
  5. Mix and Cook: Gently stir all ingredients together to combine evenly. Cover the slow cooker with the lid and cook on low for 4 to 5 hours or on high for 2 to 3 hours. Stir occasionally. If the mixture appears dry, add a few tablespoons of water to maintain moisture.
  6. Serve: Serve the cowboy beans hot with tortilla chips, corn chips, sour cream, cheese, or your preferred toppings for a hearty, crowd-pleasing meal.

Notes

  • Use lean ground beef to reduce fat content and enhance flavor balance.
  • Adjust liquid smoke amount according to your taste preference for smokiness.
  • If you prefer spicier beans, consider adding chili powder or cayenne pepper.
  • Can be prepared a day ahead; flavors improve after resting overnight.
  • Great for potlucks and game day because it keeps warm in the slow cooker.
  • Serve with cornbread or fresh salads for a complete meal.
