Ingredients
Fruit and Yogurt Mixture
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- Prepare the Yogurt Mixture: In a large bowl, thoroughly combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract until all ingredients are evenly mixed.
- Form the Clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place each scoop onto a parchment paper-lined baking sheet or large plate to create clusters. You should be able to make around 10 clusters.
- Freeze the Clusters: Transfer the baking sheet with the yogurt clusters to the freezer and freeze until the clusters are completely solid, approximately 1 to 2 hours.
- Melt the Chocolate: Place the semi-sweet chocolate chips and coconut oil into a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Coat the Frozen Clusters: Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate, ensuring they are fully coated. Place the chocolate-coated clusters back onto the parchment-lined baking sheet. Optionally, sprinkle a pinch of sea salt on top for extra flavor.
- Set the Chocolate: Return the coated clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify slightly. Once set, your Chocolate Strawberry Yogurt Clusters are ready to enjoy!
Notes
- Use ripe, fresh strawberries for the best flavor and texture.
- If you prefer a sweeter treat, adjust the honey quantity to taste.
- Make sure the clusters are fully frozen before dipping to prevent melting.
- For a dairy-free version, substitute Greek yogurt with coconut or almond yogurt.
- You can store the clusters in an airtight container in the freezer for up to one week.
