  1. Blend cottage cheese: Add the cottage cheese to a food processor or high-speed blender and blend until smooth. Transfer the smooth mixture to a medium mixing bowl.
  2. Form dough: Add 2 ¼ cups of self-rising flour to the cottage cheese and stir until a ball of dough forms. If the dough is too sticky to knead, gradually add more flour, 2 tablespoons at a time, stirring after each addition until the dough is firm enough to knead.
  3. Knead dough: Transfer the dough onto a floured surface and knead it until smooth and easy to handle.
  4. Shape flatbreads: Divide the dough into 8 equal portions, roll each into a ball, then flatten each ball into a disc about ⅛ inch thick. Set aside.
  5. Cook flatbreads: Heat a medium skillet over medium heat and lightly grease it if a more golden crust is desired. Once hot, add a dough disc and cook for 2-3 minutes until the bottom is golden. Flip and cook for another 1-2 minutes until cooked through and golden on both sides. Transfer cooked flatbread to a plate to cool. Repeat with remaining dough discs.
