Description
A simple and fresh recipe for marinated tomatoes that highlights the natural sweetness and juiciness of cherry or grape tomatoes combined with garlic, olive oil, vinegar, and fresh herbs. Perfect as a quick side dish or a flavorful addition to salads and other meals.
Ingredients
Tomatoes
- 1 pound cherry or grape tomatoes, halved or quartered
Marinade
- 1 clove garlic, finely grated
- 2 tablespoons olive oil
- 1 tablespoon vinegar or lemon juice
- 1 tablespoon freshly minced herbs (parsley recommended)
- Salt to taste (about 1/2 – 3/4 teaspoon kosher salt)
Instructions
- Combine Ingredients: In a small bowl, toss together the halved or quartered tomatoes, finely grated garlic, olive oil, your choice of vinegar or lemon juice, freshly minced herbs, and salt until everything is evenly coated.
- Marinate: Cover the bowl and refrigerate the mixture for at least 2 to 3 hours to allow the flavors to meld. For firmer tomatoes or more intense flavor, marinate up to 24 hours. Before serving, bring the tomatoes back to room temperature for the best taste.
Notes
- Use ripe, flavorful cherry or grape tomatoes for best results.
- Fresh herbs such as parsley can be substituted with basil, thyme, or oregano for variety.
- Adjust salt according to taste preference.
- Marinated tomatoes can be used as a topping for bruschetta, mixed into salads, or served as a simple side dish.
- Letting the tomatoes reach room temperature before serving enhances their flavor.
