Description

This Air Fryer Cajun Shrimp Dinner is a quick and flavorful meal featuring juicy, seasoned shrimp andouille sausage, zucchini, yellow squash, and red bell pepper cooked to perfection in an air fryer. Ready in just 30 minutes, it’s a healthy and delicious option for weeknight dinners with a smoky Cajun twist.


Ingredients

Seafood and Protein

  • 1 tablespoon Cajun or Creole seasoning
  • 24 (1 pound) cleaned and peeled extra jumbo shrimp
  • 6 ounces fully cooked Turkey/Chicken Andouille sausage or kielbasa, sliced

Vegetables

  • 1 medium zucchini (8 ounces), sliced into 1/4-inch thick half moons
  • 1 medium yellow squash (8 ounces), sliced into 1/4-inch thick half moons
  • 1 large red bell pepper, seeded and cut into thin 1-inch pieces

Other Ingredients

  • 1/4 teaspoon kosher salt
  • 2 tablespoons olive oil


Instructions

  1. Season the shrimp: In a large bowl, combine the Cajun or Creole seasoning with the cleaned and peeled shrimp. Toss well to ensure all shrimp are evenly coated with the seasoning for maximum flavor.
  2. Add sausage and vegetables: To the seasoned shrimp, add the sliced turkey or chicken Andouille sausage, zucchini, yellow squash, red bell pepper, kosher salt, and olive oil. Toss everything together until well mixed and coated in the oil.
  3. Preheat the air fryer: Preheat your air fryer to 400°F (204°C) to ensure it’s hot and ready for cooking the shrimp and vegetables evenly and quickly.
  4. Cook in batches: Transfer half of the shrimp and vegetable mixture to the air fryer basket (especially if you have a smaller basket). Cook for 8 minutes, shaking the basket 2 to 3 times during cooking to promote even browning and cooking.
  5. Set aside and repeat: Once the first batch finishes cooking, transfer it to a serving dish and repeat the process with the remaining shrimp and vegetable mixture, cooking again for 8 minutes with occasional shaking.
  6. Reheat first batch: When the second batch is done, return the first batch to the air fryer basket and cook for an additional 1 minute to reheat and crisp everything up before serving.
