Description
These Alfredo Cabbage Ribbons feature tender, lightly charred cabbage roasted to perfection and coated in a creamy garlic-Parmesan sauce. This easy and flavorful side dish blends American and Italian influences, offering a comforting alternative to traditional pasta Alfredo with a delicious vegetable twist.
Ingredients
For the Cabbage
- 1 small head cabbage
- 2 Tbsp olive oil
- salt and pepper to taste
For the Alfredo Sauce
- 2 Tbsp butter, sliced
- ⅔ cup heavy whipping cream
- ⅛ tsp garlic powder
- ⅛ tsp dried Italian seasoning
- Kosher salt and black pepper to taste
- ¾ cup freshly grated Parmigiano-Reggiano cheese
For Serving (optional)
- Grilled or roasted shrimp, tails off
Instructions
- Prepare the Cabbage: Preheat your oven to 425°F (220°C). Thinly slice the small head of cabbage into ribbon-like strips using a sharp knife or mandolin. Toss the cabbage ribbons with 2 tablespoons of olive oil and season with salt and pepper to taste.
- Roast the Cabbage: Spread the cabbage ribbons evenly on a rimmed baking sheet in a single layer to promote even roasting. Place in the oven and roast for about 20 minutes, stirring halfway through, until the cabbage is tender and lightly charred at the edges.
- Make the Alfredo Sauce: While the cabbage roasts, melt 2 tablespoons of sliced butter in a small saucepan over medium-low heat. Add ⅔ cup heavy whipping cream, ⅛ teaspoon garlic powder, and ⅛ teaspoon dried Italian seasoning. Season with kosher salt and black pepper to taste. Simmer gently for 3-5 minutes until warm and slightly thickened.
- Add Cheese to Sauce: Remove the sauce from heat and whisk in ¾ cup freshly grated Parmigiano-Reggiano cheese until smooth and creamy.
- Toss Cabbage with Alfredo Sauce: Once the cabbage is roasted, transfer it to a serving dish and pour the warm Alfredo sauce over the cabbage ribbons. Gently toss to coat all the pieces evenly in the sauce.
- Serve: Serve the Alfredo Cabbage Ribbons warm as a side dish. For an added protein boost, optionally top with grilled or roasted shrimp with the tails removed.
Notes
- The cabbage can be sliced using a mandoline for uniformly thin ribbons.
- If you prefer a thicker sauce, allow the cream to reduce slightly longer before adding the cheese.
- Substitute Parmesan cheese with Pecorino Romano for a sharper flavor if desired.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and gently reheated on the stovetop.
- This dish pairs well with grilled chicken or fish for a full meal.
