Soup Base
- 6 cups vegetable stock (or chicken stock for non-vegan option)
- 1 cup uncooked wild rice
- 8 ounces baby bella mushrooms, sliced
- 4 cloves garlic, minced
- 2 medium carrots, diced
- 2 ribs celery, diced
- 1 small white onion, peeled and diced
- 1 large sweet potato (about 1 pound), peeled and diced
- 1 bay leaf
- 1 1/2 tablespoons Old Bay seasoning
Creamy Finish
- 1 (14-ounce) can unsweetened coconut milk
- 2 large handfuls kale, roughly chopped with thick stems removed
- Fine sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Combine Base Ingredients: Add the vegetable stock, uncooked wild rice, sliced mushrooms, minced garlic, diced carrots, diced celery, diced onion, diced sweet potato, bay leaf, and Old Bay seasoning into the bowl of your Instant Pot. Stir everything briefly just to combine the ingredients evenly.
- Pressure Cook: Seal the Instant Pot lid and set to manual high pressure for 25 minutes. Once the cooking time is up, allow the Instant Pot to naturally release pressure for 10 minutes, then carefully perform a quick release to release any remaining pressure. Remove the lid and discard the bay leaf.
- Add Final Ingredients: Stir in the coconut milk and roughly chopped kale gently into the hot soup. Taste the soup and season with salt, freshly cracked black pepper, and additional Old Bay seasoning if desired.

- Alternate Cream Sauce: For a non-vegan creamy version, substitute coconut milk with 1 1/2 cups half and half, or prepare a cream sauce by melting 3 tablespoons butter over medium heat, whisking in 1/4 cup flour for one minute, then gradually whisking in 1 1/2 cups milk until smooth.
