Description
This creamy and refreshing Avocado Sorbet blends ripe avocado with agave syrup, coconut milk, and fresh lime juice for a smooth, tropical treat. Perfect as a light dessert, this sorbet is dairy-free, naturally sweetened, and easy to prepare using a blender and an ice cream maker. The lime zest and juice add a bright citrusy note that balances the rich avocado flavor.
Ingredients
Main Ingredients
- 2/3 to 3/4 cup avocado, cut into chunks (approximately 1 medium avocado)
- 1/2 cup agave syrup
- 1/2 cup light coconut milk
- 1/4 cup fresh lime juice (from 2 to 3 limes)
- 2 teaspoons finely grated lime zest, preferably organic (from 2 to 4 limes)
Instructions
- Blend the avocado: In a blender, purée the avocado until it becomes somewhat smooth. Use a spatula to scrape down the sides to ensure even blending.
- Add agave syrup: Add the agave syrup to the blender and purée again until fully combined.
- Incorporate coconut milk: With the blender motor running, gradually add light coconut milk, a little at a time, processing until the mixture is completely smooth and consistent.
- Add lime juice and zest: Add the fresh lime juice and finely grated lime zest to the blender. Process again until everything is well mixed and the texture is smooth.
- Refrigerate the mixture: Transfer the blended mixture to a sealed storage container. Refrigerate for at least 4 hours or up to overnight to chill thoroughly.
- Churn in ice cream maker: Following the manufacturer's instructions, process the chilled sorbet mixture in an ice cream maker until it reaches the desired soft-serve consistency.
- Set sorbet (optional): For a firmer texture, transfer the churned sorbet to a resealable container and freeze for at least 6 hours or up to overnight before scooping and serving.
Notes
- Ensure the avocado is ripe for the smoothest texture and best flavor.
- Adjust the amount of agave syrup to taste, depending on your sweetness preference.
- Use organic limes if possible for the zest to avoid pesticide residues.
- If you don't have an ice cream maker, you can freeze the mixture in a shallow dish and stir every 30 minutes until firm to mimic churning.
- Serve garnished with lime slices or fresh mint for added visual appeal.
