Ingredients
For the Avocado Toast
- 1 slice sourdough bread (or whole grain or gluten-free bread), toasted
- 1 ounce mashed avocado (about 1/4 small Haas avocado)
- Olive oil spray
- Kosher salt, to taste
- Black pepper, to taste
- Hot sauce or red pepper flakes (optional)
For the Egg (choose one option)
- 1 large egg (for sunny side up, scrambled, poached, or hard boiled)
Instructions
- Mash the Avocado: In a small bowl, mash the avocado until smooth. Season with kosher salt and black pepper to taste, mixing well.
- Cook the Sunny Side Up Egg: Heat a small nonstick skillet over low heat. When hot, spray lightly with olive oil. Gently crack the egg into the skillet, cover, and cook until the egg white is set and the yolk reaches your desired doneness.
- Alternative Hard Boiled Egg: Prepare a hard boiled egg by any preferred method: stovetop boiling, air fryer, or instant pot. Once cooked and peeled, it is ready to use on your toast.
- Scrambled Egg Option: Beat the egg with a fork and season with a pinch of salt. Heat a small nonstick skillet over low heat, spray with olive oil, and pour in the egg. When edges begin to set, gently fold the eggs until fully cooked, about 2-3 minutes.
- Poached Egg Option: Bring a small pot of water to a boil. Crack the egg into a small bowl. Add 1 teaspoon of white vinegar to the boiling water and stir to create a vortex. Lower heat to a simmer and carefully slide the egg into the center of the vortex. Cook for 3-4 minutes until the yolk is cooked to your liking. Remove with a slotted spoon and drain on paper towels.
