Description

These homemade Back to School Strawberry Fruit Roll-Ups are a delicious and healthy snack made from fresh strawberries, sugar, and lemon juice. Fruit Roll-Up Mixture

  • 4 1/2 cups fresh strawberries, chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice


Instructions

  1. Preheat Oven: Preheat your oven to 170°F (approximately 75°C). Prepare two large baking sheets by lining them with parchment paper and set them aside to use later.
  2. Prepare Strawberry Puree: In a blender, combine the chopped strawberries, granulated sugar, and fresh lemon juice. Blend until the mixture is completely smooth with no chunks remaining.
  3. Spread Mixture: Divide the smooth strawberry mixture evenly between the two prepared baking sheets. Using an offset spatula or a rubber spatula, spread the mixture out evenly to ensure uniform drying.
  4. Bake the Fruit Roll-Ups: Place the baking sheets in the preheated oven and bake for 3 to 3 1/2 hours or until the surface is no longer sticky and the fruit leather is leathery to the touch. Halfway through baking, after 1 1/2 hours, rotate the trays and turn them 180 degrees to ensure even drying.
  5. Cool and Slice: Once baked and cooled, let the fruit leather dry a bit more if needed. Then slice it into strips and roll each strip up with parchment paper to prevent sticking.
  6. Store: Store the finished fruit roll-ups in an airtight container at room temperature for a convenient snack ready anytime.
