Ingredients
Fish
- 4 x 150-180g (5-6 oz) fish fillets, about 1.5cm (1/2") thick, skinless and boneless
Sauce
- 50g (4 tbsp) unsalted butter
- 1/4 cup heavy cream (or thickened cream)
- 1-2 garlic cloves, minced
- 1 tbsp Dijon mustard
- 1 1/2 tbsp lemon juice
- Salt & pepper to taste
- 1 1/2 tbsp eschallots (French onion), finely chopped
To Serve
- Fresh parsley
- Lemon slices
Instructions
- Preheat Oven: Preheat your oven to 200°C (390°F), suitable for all oven types.
- Prepare Fish: Arrange the fish fillets in a baking dish, making sure they are spaced so they aren’t cramped. Season both sides of the fish with salt and pepper.
- Make Sauce: In a microwave-safe jug or bowl, combine the butter, heavy cream, minced garlic, Dijon mustard, lemon juice, salt, and pepper. Microwave in two 30-second bursts, stirring in between, until the butter is melted and the sauce is smooth.
- Add Shallots and Sauce: Sprinkle the finely chopped eschallots evenly over the fish, then pour the prepared lemon cream sauce over the top.
- Bake: Place the dish in the oven and bake for 10 to 12 minutes, or until the fish is just cooked through and flakes easily with a fork.
- Serve: Remove the fish from the oven and carefully transfer fillets to serving plates. Spoon the sauce on top and garnish with fresh parsley and lemon wedges as desired.
Notes
- Use skinless and boneless fish fillets about 1.5 cm (1/2 inch) thick for even cooking.
- Heavy cream can be substituted with coconut cream or a plant-based cream to make it dairy-free, but the texture and flavor may vary.
- Eschallots are French onions—if unavailable, shallots or finely chopped mild onions can be used as alternatives.
- Ensure not to overcrowd the fish in the baking dish to ensure even cooking.
- The cooking time may vary slightly depending on the thickness of the fish fillets and your oven.
