Description

This Baked Tomato, Spinach and Mozzarella Tortilla is a quick and easy dish perfect for breakfast, dinner, or a light lunch. Combining fresh spinach, sweet cherry tomatoes, creamy mozzarella, and eggs baked to a golden set, it's delicious served hot or cold, suitable for a variety of occasions and simple to prepare.


Ingredients

Vegetables and Dairy

  • 1 tablespoon rapeseed or olive oil
  • 1 onion, chopped
  • 125 g spinach leaves
  • 150 g cherry tomatoes, halved
  • 150 g mozzarella, cut into chunks

  • 6 eggs
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Preheat Oven: Preheat the oven to 200℃ (180℃ fan)/400°F/gas mark 6 to ensure it is at the optimal temperature for baking the tortilla.
  2. Sauté Onion: Heat the oil in a frying pan and fry the chopped onion for about 5 minutes until softened and translucent, developing a sweet base flavor.
  3. Cook Spinach: Add the spinach leaves to the pan with the onions and cook until wilted, then remove from heat to stop the cooking process.
  4. Prepare Baking Tin: Tip the spinach and onion mixture into a well-oiled 30x20cm (12x8 inch) baking tin, spreading it evenly for an even layer.
  5. Add Tomatoes and Cheese: Arrange the halved cherry tomatoes over the spinach mixture, then distribute the mozzarella chunks evenly on top for a rich, creamy texture.
  6. Beat Eggs: In a bowl, beat the eggs with a fork and season with salt and freshly ground black pepper, mixing well to combine.
  7. Pour and Bake: Pour the beaten eggs evenly into the baking tin over the vegetables and cheese. Bake in the preheated oven for about 20 minutes until the tortilla is pale golden and fully set.
  8. Serve: Remove from the oven and serve the tortilla hot or cold, as preferred.

Notes

  • Use a solid baking tin, not a loose-bottomed tin, to prevent the egg mixture from leaking out during baking.
  • If your frying pan has an oven-proof handle, you can assemble and bake the tortilla directly in the pan for fewer dishes.
  • Store leftovers in the fridge for up to 3 days, but this dish is not suitable for freezing.
