Description

This moist and flavorful Banana and Pear Bread is a delightful twist on traditional banana bread. With ripe bananas and peeled, chopped pears combined with warming spices like cardamom, ginger, and nutmeg, it offers a unique fruity and spiced aroma perfect for breakfast, snacks, or dessert. The bread is tender and richly textured, made with a combination of butter, sugars, yogurt, and eggs to create a balanced, sweet treat that everyone will enjoy.

Ingredients

Fruits

  • 2 ripe bananas (the riper the better)
  • 2 pears (peeled and chopped)

Wet Ingredients

  • ½ cup unsalted butter (softened)
  • ¼ cup vanilla yogurt
  • 2 eggs
  • 1 tsp vanilla extract

Dry Ingredients

  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ¾ tsp salt
  • 1 tsp cardamom
  • ½ tsp ginger
  • ¼ tsp nutmeg
  • 2 cups flour

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it's ready for baking the bread evenly.
  2. Mash Fruits: Mash the ripe bananas and chopped peeled pears together on a plate until combined; set this mixture aside for later use in the batter.
  3. Mix Wet Ingredients: In a large bowl, cream together the softened unsalted butter, white sugar, brown sugar, vanilla yogurt, and eggs until the mixture is smooth and creamy.
  4. Combine Fruit Mixture: Add the mashed banana and pear mixture to the creamed wet ingredients and gently fold to combine without overmixing.
  5. Add Dry Ingredients: Stir in baking soda, vanilla extract, salt, cardamom, ginger, nutmeg, and flour into the wet mixture until just combined to form the batter.
  6. Prepare and Bake: Pour the batter into 4 small loaf pans or 1 large loaf pan. Bake in the preheated oven for about 31 minutes for small pans or 50-60 minutes for a large pan. Keep an eye on the baking time and check doneness by inserting a toothpick which should come out clean.
  7. Cool and Serve: Once baked, allow the banana and pear bread to cool in the pan for at least 10 minutes before slicing and serving, to ensure it sets properly.

Notes

  • For best flavor, use the ripest bananas available.
  • You can substitute yogurt with sour cream for a tangier taste.
  • If loaf pans are not available, a muffin tin can be used but adjust baking time accordingly.
  • Check bread with a toothpick after 50 minutes if baking a large loaf to avoid overbaking.
  • This bread keeps well stored in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
