Ingredients
Cake Batter
- 1 package yellow cake mix (regular size)
- 1 package (3.4 ounces) instant banana cream pudding mix
- 2 medium bananas, mashed
- 3 large eggs, room temperature
- 1 cup water
- 1/2 cup canola oil
Glaze
- 1 1/2 cups confectioners' sugar
- 1 tablespoon butter, softened
- 2 to 3 tablespoons whole milk
Garnish
- Vanilla wafers
- Sliced bananas
Instructions
- Make the cake batter: Preheat your oven to 350°F. In a large mixing bowl, combine the yellow cake mix, instant banana cream pudding mix, mashed bananas, eggs, water, and canola oil. Using a hand mixer or stand mixer, beat the ingredients on low speed for 30 seconds, then increase to medium speed and continue mixing for 2 minutes until well combined.
- Bake the cake: Grease and flour a 10-inch fluted tube pan. Pour the batter evenly into the prepared pan. Place in the preheated oven and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely to room temperature. It's important to let the cake cool fully before glazing to prevent the glaze from melting and becoming sticky.
- Prepare the glaze and decorate: In a small bowl, whisk together the confectioners’ sugar, softened butter, and just enough whole milk (2 to 3 tablespoons) to achieve a smooth, pourable consistency. Drizzle the glaze evenly over the cooled cake. Garnish the cake with vanilla wafers and banana slices. To keep the banana slices from browning, you can squeeze some lemon juice on them before placing them on the cake. Alternatively, banana chips can be used as a garnish.
Notes
- Make sure the cake is completely cooled before applying the glaze to avoid melting.
- For a fresh look, prevent banana slices from browning by applying lemon juice.
- You can substitute stale vanilla wafers for an added texture contrast.
- Room temperature eggs help the batter mix evenly.
