Ingredients
For the Chicken and Marinade:
- 1 lb chicken breast (cut into 1.5-inch pieces)
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tbsp sriracha (adjust to taste)
- 1 tbsp lime juice
- 1 clove garlic (minced)
- 1 tsp fresh ginger (grated)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- Skewers (soak wooden skewers 30 min before use)
For Serving:
- Extra sweet chili sauce and mayo mixed for dipping
- Chopped fresh cilantro or parsley (optional)
Instructions
- Prepare the Marinade: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, garlic, ginger, soy sauce, sesame oil, salt, and pepper until the mixture is smooth and well combined.
- Marinate the Chicken: Add the chicken pieces to the marinade and toss to ensure each piece is thoroughly coated. Cover the bowl and refrigerate for at least 1 hour to let flavors meld, or overnight for a richer taste.
- Preheat the Grill: Heat your grill or grill pan to medium-high temperature to prepare for cooking the skewers evenly.
- Assemble the Skewers: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving small gaps between each piece to allow even cooking and exposure to heat.
- Grill the Chicken: Place the skewers on the grill and cook for 10 to 15 minutes, turning them 2 to 3 times to ensure the chicken develops charred edges and cooks through to an internal temperature of 165°F (75°C).
- Rest and Serve: Remove the skewers from the grill and let them rest for 2 to 3 minutes. Prepare the dipping sauce by mixing additional mayo and sweet chili sauce. Garnish the skewers with chopped cilantro or parsley if desired before serving.
Notes
- Soak wooden skewers for at least 30 minutes before grilling to prevent burning.
- Adjust sriracha quantity based on your preferred spice level.
- For best flavor, marinate the chicken overnight.
- Use a meat thermometer to ensure chicken is cooked to a safe internal temperature of 165°F (75°C).
- These skewers can also be cooked under a broiler or on a grill pan if an outdoor grill is unavailable.
