Description

Berry Cheesecake Fluff Salad is a luscious, creamy dessert salad combining whipped cream cheese, heavy whipping cream, and strawberry Jello for a light and fluffy texture. Bursting with fresh strawberries, blueberries, and mini marshmallows, this no-bake salad is a delightful treat perfect for potlucks, picnics, or a quick sweet snack.

Ingredients

Dairy & Cream

  • 4 ounces cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/3 cup confectioners' sugar

Flavorings & Gelatin

  • 3 ounces strawberry Jello
  • 1 1/2 tsp vanilla extract

Fruits & Mix-ins

  • 2 cups strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup mini marshmallows

Instructions

  1. Whip Cream Cheese and Cream: In a large stand mixer or mixing bowl, whip the softened cream cheese until smooth. Add the heavy whipping cream, confectioners' sugar, and vanilla extract, then continue whipping until stiff peaks form in the cream mixture.
  2. Incorporate Jello: Add the strawberry Jello powder to the whipped mixture and mix on low speed until the Jello is fully blended and the mixture appears uniform.
  3. Fold in Fruits and Marshmallows: Gently fold in the sliced strawberries, blueberries, and mini marshmallows to avoid deflating the fluffy mixture.
  4. Chill and Serve: Cover the salad and refrigerate for 5 to 15 minutes to allow it to set slightly and flavors to meld. Serve chilled and store any leftovers in an airtight container in the refrigerator.

Notes

  • Ensure the cream cheese is softened to room temperature for easier whipping.
  • Folding the fruits and marshmallows gently helps maintain the fluffiness of the salad.
  • Try substituting different berries or adding nuts for texture variations.
  • This salad is best served chilled; refrigerate leftovers to keep fresh.
