Ingredients

Cupcakes

  • 1 ¼ cups all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 3 eggs
  • 2 teaspoon vanilla extract
  • ½ cup sour cream
  • 2-3 teaspoons red food color

Cream Cheese Frosting

  • 8 ounces cream cheese
  • 4 tablespoons unsalted butter, softened
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • 2 cups icing sugar

Bloody Red Icing

  • ¼ cup icing sugar
  • 3 tablespoons milk (or more as needed)
  • 2 teaspoons red food color

Optional Decorations

  • 12 Halloween knife icing decorations

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350℉. Line a 12-cup standard muffin tin with paper liners and spray them with cooking spray to prevent sticking.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Set aside.
  3. Cream Butter and Sugars: In the bowl of a mixer or another mixing bowl, beat the softened butter with granulated sugar and brown sugar until the mixture lightens in color and is well combined.
  4. Add Eggs, Vanilla, and Sour Cream: Add eggs one at a time, beating thoroughly after each addition. Then mix in the vanilla extract and sour cream until smooth.
  5. Add Red Food Color: Incorporate red food coloring gradually, starting with 1 teaspoon and adding up to 3 teaspoons or until the desired vibrant red color is achieved.
  6. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the wet ingredients while mixing on low speed, scraping the sides of the bowl to ensure full incorporation without overmixing.
  7. Fill Muffin Cups: Using an ice cream scoop, distribute the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
  8. Bake: Bake the cupcakes for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool Cupcakes: Allow the cupcakes to cool for 5 minutes in the muffin tin before transferring them to a wire rack to cool completely.
  10. Make Cream Cheese Frosting: Beat cream cheese and softened butter together until smooth. Add vanilla extract, salt, and icing sugar; continue mixing until the frosting is fluffy and creamy.
  11. Frost Cupcakes: Fill a piping bag with the cream cheese frosting and frost the cooled cupcakes evenly.
  12. Prepare Bloody Red Icing: In a small bowl, whisk icing sugar with milk and red food coloring until well mixed, creating a thin, blood-like red icing suitable for drizzling.
  13. Decorate: Dip the blade side of a Halloween knife decoration into the red icing then gently insert it into the frosting of each cupcake. Drizzle additional red icing over the cupcakes to enhance the bloody effect.

Notes

  • Adjust the amount of red food coloring depending on the brand and desired shade of red.
  • Ensure the cupcakes are completely cool before frosting to prevent melting of the cream cheese frosting.
  • The red icing should be thin enough to drizzle easily; add extra milk if needed.
  • Use the optional Halloween knife decorations for a dramatic Halloween-themed presentation.
  • Store frosted cupcakes in the refrigerator if not serving immediately to keep frosting fresh.
