Ingredients
Pasta and Vegetables
- 12 ounces (4 cups) bow tie pasta, dry
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1 cup spinach, packed, finely chopped
- 1/2 cup basil, finely chopped
Cheese
- 1 cup bocconcini cheese, halved
Dressing
- 3 tablespoons pesto
- 2 tablespoons olive oil
- 1/2 lemon, juiced
- Salt, to taste
- Black pepper, to taste
- Additional olive oil for tossing pasta
Instructions
- Cook the Pasta: Fill a large pot with water and bring it to a boil. Add plenty of salt to the water, then cook the bow tie pasta according to package directions or until it reaches slightly past al dente. Drain the pasta and toss it immediately with a little olive oil to prevent sticking. Allow it to cool to room temperature. If desired, rinse briefly with cold water to speed cooling before adding the oil.
- Prepare the Dressing: While the pasta is cooking, combine pesto, olive oil, and fresh lemon juice in a small bowl or jar. Whisk or shake to blend the dressing well.
- Combine Salad Ingredients: In a large bowl, add the cooled pasta, halved cherry tomatoes, diced red onion, halved bocconcini cheese, finely chopped spinach, and chopped basil. Stir gently to mix all components evenly.
- Add Dressing and Season: Pour the prepared pesto dressing over the pasta mixture. Season generously with salt and freshly ground black pepper. Toss gently but thoroughly until all ingredients are coated in the dressing. Taste and adjust the seasoning or add more pesto if desired, depending on its thickness.
- Serve or Store: Serve the pasta salad immediately for best flavor or cover and refrigerate it in an airtight container for up to 5 days to enjoy later.
Notes
- Running the pasta under cold water after cooking helps to cool it quickly and prevents it from sticking, especially if you are in a hurry.
- Adjust the amount of pesto dressing according to your taste preference and the consistency of the pesto used.
- This salad can be made ahead and stored refrigerated, making it ideal for meal prep or parties.
- For added protein, consider adding grilled chicken or chickpeas.
- Use fresh basil for the best flavor and aroma.
