Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and lightly coat a baking sheet with nonstick cooking spray to prevent sticking.
- Cook Tater Tots: Prepare the tater tots according to the package directions until they are crispy and golden brown.
- Cook Sausage: While the tater tots are cooking, heat olive oil in a large nonstick skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a wooden spoon, until fully cooked with no pink remaining. Drain off excess fat and transfer the sausage to a bowl. Wipe out the skillet for the next step.
- Make Scrambled Eggs: Prepare fluffy scrambled eggs seasoned with salt and cooked in butter to your desired doneness.
- Assemble Burritos: Lay out the tortillas and evenly distribute the ingredients down the center of each: about 1/3 cup cooked sausage, 5-6 crispy tater tot crowns, 1/3 cup scrambled eggs, 2-3 tablespoons shredded Cheddar cheese, and a sprinkle of diced scallions. Fold in the opposite sides of each tortilla, then roll it snugly from the bottom up to form a burrito. Place each seam side down on the prepared baking sheet.
