Description
Classic Brazilian Brigadeiro is a rich, fudgy chocolate treat made from condensed milk, cocoa powder, and butter. This beloved dessert is quick to prepare, cooked on the stovetop until thickened, then rolled into bite-sized balls and coated in colorful sprinkles. Perfect for parties or a sweet snack, Brigadeiros are creamy, chocolaty, and delightfully addictive.
Ingredients
Main Ingredients
- 1 14-ounce can (397g) condensed milk
- 5 tablespoons (37g) cocoa powder
- 2 tablespoons (29g) butter, plus additional for rolling
- A pinch of salt
- Sprinkles for coating
Instructions
- Combine ingredients: In a medium saucepan set over medium heat, pour in the condensed milk, then add the butter, cocoa powder, and a pinch of salt. Stir together to combine.
- Cook the mixture: Bring the mixture to a gentle bubble, then reduce heat to low. Stir frequently with a wooden spoon or spatula to prevent burning. Continue cooking for about 10 minutes until the mixture thickens.
- Check consistency: To know when the mixture is ready, drag your spatula along the bottom of the pan; the mixture should leave a trail and you should be able to see the pan bottom for about 2 seconds. The mixture will also slide off the pan easily. Remove from heat and pour onto a plate to cool to touch, about 30 minutes.
- Shape the Brigadeiros: Lightly butter your hands to prevent sticking. Take small portions of the cooled mixture and roll into bite-sized balls.
- Coat and serve: Roll the balls in sprinkles to coat them evenly. Serve immediately or chill until ready to serve.
Notes
- For a smoother texture, ensure constant stirring to prevent burning during cooking.
- If the mixture isn’t thick enough, continue cooking a few more minutes, but avoid overcooking to prevent hardness.
- You can substitute sprinkles for finely chopped nuts or shredded coconut for variation.
- Keep Brigadeiros refrigerated if not serving immediately; they can be stored for up to 3 days.
- Butter your hands well to avoid the mixture sticking while shaping balls.
