Ingredients

Chicken

  • 3 large chicken breasts

  • 1 1/2 tsp garlic powder (divided)

Filling

  • 1 cup broccoli florets (finely chopped)
  • 1/2 cup red bell pepper (finely diced)
  • 1 cup mild cheddar cheese
  • 1 tbsp mayonnaise


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the stuffed chicken breasts.
  2. Prepare Chicken: Season both sides of the chicken breasts with salt, pepper, paprika, and 1/2 teaspoon of garlic powder. Carefully slice through the middle of each chicken breast horizontally, creating a pocket without cutting all the way through.
  3. Make Filling: Place the finely chopped broccoli in a microwave-safe dish with about 2 tablespoons of water. Cover with plastic wrap and microwave for 1 minute to soften. Drain excess water.
