Description

Ingredients

Carrots

  • 1 kg / 2 lb carrots, peeled

Glaze

  • 1/4 cup (40g) brown sugar, loosely packed
  • 2 garlic cloves, minced
  • 2 tbsp butter (30g), melted (or olive oil)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Garnish (Optional)

  • Parsley, for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 220°C/425°F (200°C fan-forced) to get it hot enough for roasting the carrots nicely.
  2. Prepare Carrots: Cut the carrots on a diagonal into approximately 4 cm (1.75 inch) lengths. Halve the thicker ends to ensure all pieces are roughly the same width for even cooking.
  3. Toss Ingredients: In a large bowl, combine the carrots with brown sugar, melted butter, minced garlic, olive oil, salt, and black pepper. Mix well until the carrots are evenly coated with the glaze.
  4. Roast Carrots: Spread the glazed carrots out on a roasting tray in a single layer. Roast for 15 minutes, then toss to ensure even caramelization. Return to oven and roast for an additional 10 minutes until the carrots are tender and caramelized at the edges with plenty of glaze left on the tray.
  5. Final Toss and Serve: Give the carrots a final toss in the remaining glaze on the tray, then transfer them to a serving bowl. Sprinkle with parsley if desired and serve warm.
