Description

This Cajun Steak Tips in Cheesy Rigatoni Parmesan Sauce combines tender, flavorful steak tips seasoned with bold Cajun spices with al dente rigatoni pasta smothered in a rich, creamy Parmesan and mozzarella sauce. This comforting, hearty dish comes together quickly using simple ingredients and is perfect for a satisfying weeknight dinner.

Ingredients

Steak and Seasoning

  • 1 lb steak tips (sirloin or ribeye), cut into bite-sized pieces
  • 1 tbsp Cajun seasoning (plus more to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter (divided)
  • Salt and black pepper to taste

Pasta

  • 10 oz rigatoni pasta

Sauce

  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1/2 cup shredded mozzarella or Fontina cheese (optional)

Instructions

  1. Season the Steak: Sprinkle steak tips evenly with Cajun seasoning to coat all sides, preparing them for searing and flavor infusion.
  2. Sear the Steak: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add the seasoned steak tips and sear until browned on all sides, about 3-4 minutes per side. Remove steak from skillet and set aside.
  3. Cook the Pasta: Bring a large pot of salted water to a boil. Add rigatoni pasta and cook until al dente according to package instructions, approximately 10-12 minutes. Drain the pasta, reserving 1/2 cup of the pasta water.
  4. Make the Sauce Base: In the same skillet used for steak, add the remaining tablespoon of butter. Sauté the minced garlic over medium heat until fragrant, about 1 minute. Pour in heavy cream and bring to a gentle simmer.
  5. Add the Cheese: Stir in freshly grated Parmesan cheese until melted and the sauce thickens slightly. If desired, add shredded mozzarella or Fontina cheese and stir until melted and smooth. Season the sauce with salt, black pepper, and additional Cajun seasoning to taste.
  6. Combine: Add the cooked rigatoni to the sauce, tossing to coat. If the sauce is too thick, gradually stir in the reserved pasta water to reach desired consistency. Gently fold the seared steak tips back into the pasta and sauce mixture to combine evenly.
  7. Serve: Plate the cheesy rigatoni with steak tips immediately, garnishing with extra Parmesan cheese and freshly cracked black pepper for added flavor and presentation.

Notes

  • Use sirloin or ribeye steak tips for the best tenderness and flavor.
  • Adjust Cajun seasoning to your spice preference; add more for extra heat.
  • Reserved pasta water helps loosen the sauce without diluting flavor.
  • Fontina cheese is a great alternative to mozzarella for a creamier texture.
  • Serve immediately for optimal texture and warmth.
