Description

This Cajun Steak Tips with Cheesy Rigatoni Parmesan Sauce recipe combines tender, flavorful steak tips seasoned with zesty Cajun spices with creamy, cheesy rigatoni pasta. The rich Parmesan and optional mozzarella or Fontina create a luscious sauce that coats the pasta beautifully. Ready in just 35 minutes, this hearty dish is perfect for a satisfying weeknight dinner that feels indulgent yet effortless.

Ingredients

Steak and Seasoning

  • 1 lb steak tips (sirloin or ribeye), cut into bite-sized pieces
  • 1 tbsp Cajun seasoning (plus more to taste)
  • Salt and black pepper to taste

Pasta

  • 10 oz rigatoni pasta

Sauce

  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tbsp butter (divided)
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella or Fontina cheese (optional)

Instructions

  1. Sear the Steak: Season the steak tips evenly with Cajun seasoning. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat until hot. Add the steak tips and sear them until browned on all sides, about 3-4 minutes. Remove the steak tips from the skillet and set aside.
  2. Cook the Pasta: In a large pot, bring salted water to a boil. Add rigatoni and cook until al dente according to package instructions, usually about 10-12 minutes. Drain the pasta, reserving 1/2 cup of the pasta cooking water for later use.
  3. Make the Sauce Base: In the same skillet used for the steak, add the remaining tablespoon of butter. Sauté the minced garlic over medium heat until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  4. Add the Cheese: Stir freshly grated Parmesan cheese into the cream until melted and smooth. If using, add shredded mozzarella or Fontina cheese and continue stirring until completely melted. Season the sauce with salt, black pepper, and additional Cajun seasoning to taste.
  5. Combine: Add the cooked rigatoni to the cheese sauce, tossing gently to coat. If the sauce is too thick, add reserved pasta water a tablespoon at a time to reach desired consistency. Gently fold the seared steak tips back into the pasta and sauce.
  6. Serve: Plate the creamy Cajun steak rigatoni immediately. Garnish with extra grated Parmesan cheese and a sprinkle of cracked black pepper for added flavor and presentation.

Notes

  • Use ribeye steak tips for a more tender and flavorful result, but sirloin works well too.
  • If you prefer a spicier kick, add more Cajun seasoning or a pinch of cayenne pepper to taste.
  • Reserve pasta water is essential to help achieve the perfect creamy sauce consistency.
  • For a lighter version, substitute half-and-half for heavy cream, though the sauce will be less rich.
  • This dish pairs well with a simple green salad or steamed vegetables for a balanced meal.
