Description

Candy Corn Peanut Mallow Bars combine the sweet seasonal flavors of candy corn and marshmallows with crunchy peanuts and creamy peanut butter chips. These no-bake, fruity and nutty bars are perfect for fall and Halloween treats, featuring a layered texture with a deliciously gooey marshmallow topping and a crunchy base.

Ingredients

Base Layer

  • 1 1/2 cups peanuts
  • 1/2 cup candy corn

Melted Peanut Butter Mixture

  • 1 bag (about 10-12 oz) peanut butter chips
  • 4 tablespoons butter
  • 1 can (14 oz) sweetened condensed milk

Marshmallow Layer

  • 1 bag (10 oz) marshmallows

Topping

  • 1/2 cup peanuts
  • 1 cup candy corn

Instructions

  1. Prepare the base layer: Mix 1 1/2 cups of peanuts and 1/2 cup of candy corn in a small bowl. Spread this mixture evenly on the bottom of a 9x13 inch pan to form a crunchy foundation.
  2. Melt peanut butter chips and butter: In a small saucepan over medium heat, melt the peanut butter chips and 4 tablespoons of butter together, stirring frequently to prevent burning. Once fully melted, stir in the entire 14 oz can of sweetened condensed milk until smooth and combined.
  3. Coat marshmallows: Place the 10 oz bag of marshmallows in a large bowl. Pour the warm peanut butter and condensed milk mixture over the marshmallows and stir thoroughly until all the marshmallows are evenly coated and slightly melted.
  4. Assemble the top layer: Spread the coated marshmallow mixture evenly over the peanut and candy corn base in the pan. Then sprinkle the remaining 1/2 cup peanuts and 1 cup candy corn evenly over the top, gently pressing them into the marshmallow layer to adhere.
  5. Chill and set: Refrigerate the pan for at least 1-2 hours or until the bars are firm and easier to cut into squares. Serve chilled for best texture.

Notes

  • You can substitute peanuts with any other nuts like almonds or cashews if desired.
  • Press the top layer gently but firmly to ensure toppings stick well into the marshmallows.
  • Store the bars in an airtight container in the refrigerator to maintain freshness for up to a week.
  • For a gluten-free version, ensure that peanut butter chips and candy corn are labeled gluten free.
  • If you prefer a sweeter or less sweet bar, adjust the amount of candy corn accordingly.
