Instructions
- Prep: Spray the inside of a 12-ounce microwave-safe mug with coconut oil or your preferred cooking spray to prevent sticking.
- Mix: In the mug, add the egg, ricotta cheese, pure vanilla extract, and pistachio (or almond) extract. Stir with a fork until well combined. Then add the golden flaxseed meal, almond flour, keto granulated sweetener, baking powder, and salt. Stir again until the batter is smooth and evenly mixed.
- Cook: Microwave the mug on HIGH for 90 seconds, then check doneness. If the cake is not fully cooked, continue microwaving in 15-second intervals until the top is puffed and no longer tacky, usually between 2 to 2 1/2 minutes total.
