Description

This Cannoli Protein Mug Cake is a quick and delicious single-serving dessert that combines the flavors of ricotta, pistachios, and chocolate chips without any protein powder.   • 3 tablespoons almond flour
  • 1 tablespoon keto granulated sweetener (or regular granulated white sugar)
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Toppings

  • 1 teaspoon finely chopped pistachios (or almonds, hazelnuts, pecans, etc.)
  • 1 teaspoon mini chocolate chips
  • 2 tablespoons plain unsweetened Greek yogurt (or any flavor you like)


Instructions

  1. Prep: Spray the inside of a 12-ounce microwave-safe mug with coconut oil or your preferred cooking spray to prevent sticking.
  2. Mix: In the mug, add the egg, ricotta cheese, pure vanilla extract, and pistachio (or almond) extract. Stir with a fork until well combined. Then add the golden flaxseed meal, almond flour, keto granulated sweetener, baking powder, and salt. Stir again until the batter is smooth and evenly mixed.
  3. Cook: Microwave the mug on HIGH for 90 seconds, then check doneness. If the cake is not fully cooked, continue microwaving in 15-second intervals until the top is puffed and no longer tacky, usually between 2 to 2 1/2 minutes total.
  4. Enjoy: Allow the mug cake to cool for 5 to 10 minutes. Top with the finely chopped pistachios (or other nuts), mini chocolate chips, and plain unsweetened Greek yogurt before serving for a creamy and crunchy finish.
