Ingredients
For the Caramelized Onions
- 3 onions, cut into thin half moon slices
- 2 tbsp grass-fed butter or ghee
- Pinch of salt
- 2 tsp coconut sugar
- 2-3 tbsp water or broth (for deglazing)
For the Flatbread
- 8-10 oz. flatbread or thin rectangular pizza crust
- ½ cup fig jam
- 2 oz. goat cheese
- Fresh rosemary for garnish
- Olive oil (amount as needed for cooking onions)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the flatbread later.
- Caramelize Onions: In a large skillet or cast iron pan over medium heat, heat olive oil and butter. Add the sliced onions and a pinch of salt, tossing to coat evenly. Cook for 8-10 minutes, stirring occasionally, until the onions start to soften.
- Slow Cook Onions: Reduce heat to medium-low and continue cooking the onions for another 20-25 minutes, stirring occasionally, until they turn a dark golden brown and fully caramelized.
- Deglaze Pan: Add 2-3 tablespoons of water or broth to the pan and scrape up all the flavorful browned bits from the bottom to enhance the onion flavor.
- Prepare Flatbread: Spread a layer of fig jam over the flatbread or pizza crust, then evenly distribute the caramelized onions on top. Crumble goat cheese over the onions.
- Bake: Place the flatbread in the preheated oven and bake for 7-8 minutes until heated through and the cheese starts to soften.
- Broil Finish: Turn the oven broiler on and cook the flatbread for an additional 1 minute to brown the cheese slightly and add a touch of crispness.
- Garnish and Serve: Remove the flatbread from the oven, garnish with fresh rosemary sprigs, slice, and serve warm.
