Description

This caramelized onion and fig flatbread combines the rich sweetness of slowly caramelized onions with luscious fig jam and creamy goat cheese on a crispy flatbread base. Perfect as a sophisticated appetizer or party snack, it’s garnished with fresh rosemary for an aromatic finish.


Ingredients

For the Caramelized Onions

  • 3 onions, cut into thin half moon slices
  • 2 tbsp grass-fed butter or ghee
  • Pinch of salt
  • 2 tsp coconut sugar
  • 2-3 tbsp water or broth (for deglazing)

For the Flatbread

  • 8-10 oz. flatbread or thin rectangular pizza crust
  • ½ cup fig jam
  • 2 oz. goat cheese
  • Fresh rosemary for garnish
  • Olive oil (amount as needed for cooking onions)


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the flatbread later.
  2. Caramelize Onions: In a large skillet or cast iron pan over medium heat, heat olive oil and butter. Add the sliced onions and a pinch of salt, tossing to coat evenly. Cook for 8-10 minutes, stirring occasionally, until the onions start to soften.
  3. Slow Cook Onions: Reduce heat to medium-low and continue cooking the onions for another 20-25 minutes, stirring occasionally, until they turn a dark golden brown and fully caramelized.
  4. Deglaze Pan: Add 2-3 tablespoons of water or broth to the pan and scrape up all the flavorful browned bits from the bottom to enhance the onion flavor.
  5. Prepare Flatbread: Spread a layer of fig jam over the flatbread or pizza crust, then evenly distribute the caramelized onions on top. Crumble goat cheese over the onions.
  6. Bake: Place the flatbread in the preheated oven and bake for 7-8 minutes until heated through and the cheese starts to soften.
  7. Broil Finish: Turn the oven broiler on and cook the flatbread for an additional 1 minute to brown the cheese slightly and add a touch of crispness.
  8. Garnish and Serve: Remove the flatbread from the oven, garnish with fresh rosemary sprigs, slice, and serve warm.
