These Cheeseburger Sliders are a delicious and easy-to-make appetizer or meal perfect for parties or family dinners. Juicy ground beef mixed with savory seasonings and mayonnaise, layered with cheddar cheese, and baked atop buttery dinner rolls create a crowd-pleasing slider with melted cheese and golden, sesame-topped buns—all ready in about 30 minutes.
Ingredients
Meat and Seasonings
- 2 lb lean ground beef (90/10 or 93/7 fat content)
- 1/2 Tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 large yellow onion (finely diced)
Sauce and Cheese
- 1/4 cup mayonnaise
- 8 slices medium cheddar cheese
- 6 oz medium cheddar shredded (or additional sliced cheese)
Buns and Toppings
- 24 dinner rolls (or 2 packs of 12)
- 2 Tbsp unsalted butter (melted, plus more to grease baking sheet)
- 1 Tbsp sesame seeds
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Butter the bottom of a rimmed baking sheet thoroughly to prevent sticking and add richness.
- Cook Beef and Onions: Heat a large skillet over medium-high heat and add 1/2 tablespoon olive oil. Add the finely diced onion and cook briefly until softened. Then add the 2 lbs of ground beef, breaking it up with a spatula. Season with 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder. Cook the beef mixture, stirring often, until the beef is fully cooked through but still juicy. Remove skillet from heat.
- Drain Excess Fat and Add Mayonnaise: Tilt the skillet carefully to spoon off and discard any excess rendered fat to keep the sliders from being greasy. Stir in 1/4 cup mayonnaise evenly throughout the cooked beef mixture to add moistness and flavor.
- Assemble Sliders: Slice all dinner rolls in half. Arrange the bottom halves on the buttered baking sheet in a single layer. Lay one slice of cheddar cheese on each bottom bun. Evenly spread the beef mixture over the cheese on each bun, using the back of a spatula to square off the edges for neatness. Sprinkle the 6 oz shredded cheddar cheese evenly over the beef layer.
- Add Tops & Season: Place the top halves of the buns cut-side down onto each slider. Brush the tops generously with 2 tablespoons melted butter, then immediately sprinkle with 1 tablespoon sesame seeds to give a golden, nutty crust when baked.
- Bake: Place the assembled sliders in the preheated oven and bake for 12 to 15 minutes, or until the cheese is fully melted and the buns are golden brown on top. Remove from oven and let cool slightly before serving.
