Ingredients
Potatoes
- 8 baking potatoes, washed
- 3 tablespoons canola oil
- 1 tablespoon kosher salt
Cheeseburger Filling
- 2 pounds ground beef
- ½ cup (80 g) yellow onion, finely diced
- 1 cup (240 g) ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons hamburger seasoning
- 1 teaspoon seasoned salt
- 1 teaspoon garlic powder
Potato Mixture
- ½ cup (119 g) heavy whipping cream
- ¼ cup (½ stick / 57 g) unsalted butter
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 cup (113 g) sharp cheddar cheese, shredded and divided
Garnish
- ½ cup dill pickles, diced
- Tomatoes, diced
Instructions
- Preheat Oven: Preheat your oven to 400°F to prepare for baking the potatoes.
- Prepare Potatoes: Scrub the potatoes thoroughly to clean them, then pierce each potato several times with a fork to allow steam to escape during baking.
- Oil and Salt Potatoes: Rub each potato with canola oil and sprinkle evenly with kosher salt to enhance flavor and help crisp the skins.
- Bake Potatoes: Place the potatoes directly on the oven rack and bake for about 1 hour, or until the potatoes are fork-tender.
- Cool Potatoes: Remove the baked potatoes from the oven and let them cool slightly so they are easier to handle.
- Cook Cheeseburger Filling: While potatoes bake, heat a large skillet over medium heat. Add ground beef and diced onions, cooking until the beef is fully browned and onions are softened. Drain excess grease.
- Add Seasonings: Stir in ketchup, yellow mustard, hamburger seasoning, seasoned salt, and garlic powder. Let the mixture simmer over low heat for 3–4 minutes to blend flavors, then remove from heat.
- Reduce Oven Temperature: Lower the oven temperature to 350°F to prepare for baking the stuffed potatoes.
- Prepare Potato Shells: Use a knife to slice off the tops of each potato lengthwise. Carefully scoop out the insides into a large mixing bowl, leaving shells intact without tearing.
- Mix Potato Filling: To the potato flesh, add heavy whipping cream, unsalted butter, garlic powder, kosher salt, black pepper, and half of the shredded cheddar cheese. Mash everything together until smooth and creamy.
- Fill Potato Shells: Spoon the mashed potato mixture evenly back into the hollowed potato shells placed on a baking sheet.
- Add Cheeseburger Filling: Divide the prepared cheeseburger meat mixture equally and top each stuffed potato shell with about ½ cup of the filling.
- Top with Cheese: Sprinkle the remaining shredded cheddar cheese evenly over the tops of the filled potatoes.
- Bake Stuffed Potatoes: Return the stuffed potatoes to the 350°F oven and bake for 15–20 minutes, until heated through and cheese is melted. For a golden and bubbly top, broil for an additional 1–2 minutes watching carefully to prevent burning.
- Garnish and Serve: Garnish the twice baked potatoes with diced dill pickles and fresh diced tomatoes. Serve warm and enjoy your hearty meal.
Notes
- Be careful when scooping out the potato flesh to avoid breaking the skins.
- Use fresh dill pickles and ripe tomatoes for the best flavor contrast as garnishes.
- If you prefer, you can substitute ground turkey or chicken for ground beef for a leaner version.
- The broiling step is optional but helps achieve a nice melted, golden cheese topping.
- Leftovers can be refrigerated and reheated in the oven for best texture retention.
