Caramelized Onions

  • 1 teaspoon chopped fresh thyme

Dough

  • 1 cup warm water (110 to 120 degrees F)
  • 1 (1/4-ounce) packet active dry yeast
  • 1 teaspoon sugar
  • 2 1/4 cups White Lily All-Purpose Wheat and White Grape Seed Blend
  • 2 tablespoons olive or vegetable oil
  • 1 teaspoon salt

Toppings

  • 2 ripe pears, peeled, cored, and thinly sliced
  • 3 cups shredded mozzarella cheese
  • 1/4 cup chopped pecans
  • 1/4 cup crumbled blue cheese


Instructions

  1. Caramelize the Onions: Heat 2 tablespoons oil and 1 tablespoon butter in a large pan over medium-low heat. Add the thinly sliced onions and cook for 20 to 25 minutes, stirring occasionally, until they become golden brown and caramelized.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute to release the aroma without burning.
  3. Finish Onions: Stir in balsamic vinegar, sugar, and chopped fresh thyme. Remove the pan from heat and season the mixture with salt and pepper; set aside.
  4. Prepare Yeast Mixture: In a medium bowl, combine warm water, active dry yeast, and 1 teaspoon of sugar. Allow the mixture to sit undisturbed for 10 minutes until it becomes frothy and activates the yeast.
  5. Make Dough: Stir in the flour, 2 tablespoons of oil, and 1 teaspoon salt into the yeast mixture until a rough dough forms. Transfer to a floured surface and knead gently for one minute. Cover the dough and let it rest for 5 minutes.
