Soft scrambled eggs with melty cheddar cheese and savory pre-cooked sausage wrapped in warm flour tortillas, then pan-fried to golden perfection. Quick to make and perfect for busy mornings or on-the-go breakfasts.
Ingredients
Egg Mixture:
- 8 large eggs
- ¼ cup milk
- Salt and pepper, to taste
Fillings and Wrap:
- 8 pre-cooked breakfast sausage links
- 8 (8-inch) flour tortillas, soft and pliable
- 1 cup shredded cheddar cheese
For Cooking:
- 1 tablespoon butter (for cooking the eggs)
- Non-stick cooking spray or additional butter (for skillet)
Instructions
- Prepare the Egg Mixture: Crack the eggs into a bowl and whisk together with the milk until fully combined. Season the mixture with salt and pepper to your liking.
- Cook the Scrambled Eggs: Heat a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture and gently stir continuously until the eggs are fluffy, soft, and just cooked through. Remove from heat.
- Warm the Tortillas: Heat the flour tortillas in a dry skillet or microwave until they become warm and flexible, which makes them easier to roll without cracking.
- Assemble the Roll-Ups: Lay one warm tortilla flat on a surface. Place a cooked sausage link near one edge. Spoon some of the scrambled eggs over the sausage, then sprinkle with shredded cheddar cheese.
- Roll the Tortillas: Tightly roll the tortilla around the fillings, carefully tucking in the ends to enclose the stuffing and form a neat roll-up.
- Pan-Fry the Roll-Ups: Clean the skillet and coat it with non-stick cooking spray or a little butter. Place each rolled tortilla seam side down in the skillet. Cook over medium heat until the bottom is golden brown and crispy, then flip and briefly cook the other side to seal and warm through.
- Serve: Serve the roll-ups warm, optionally with a side of salsa or hot sauce for dipping or added flavor.
Notes
- Use pre-cooked sausage links to save time; breakfast sausage patties can also be substituted.
- For milder flavor, reduce the amount of black pepper in the eggs.
- To make ahead, assemble the roll-ups without frying, wrap individually in foil, and refrigerate. Pan-fry just before serving.
- Substitute flour tortillas with whole wheat or gluten-free tortillas if desired.
- Adding vegetables like diced bell peppers or onions to the scrambled eggs can add extra nutrition and flavor.
