Description

This Chicken Marinara Meal Prep Bowl with Cauliflower Rice is a quick, nutritious, and convenient meal designed for busy individuals. Featuring seasoned cooked chicken, a medley of frozen vegetables, flavorful marinara sauce, and cheese, this dish is perfect for make-ahead freezer meals. Simply assemble, freeze, and reheat in the microwave for a healthy lunch or dinner in minutes.

Ingredients

Proteins

  • 12 ounces cooked chicken, simply seasoned (diced or shredded, refrigerated or frozen)

Vegetables

  • 2 cups frozen riced cauliflower (unseasoned)
  • 2 cups frozen broccoli florets (unseasoned)
  • 1 cup frozen spinach (unseasoned)
  • 1 cup red bell peppers (sliced or diced, frozen or fresh)

Other Ingredients

  • 1 cup marinara sauce
  • ¼ cup Parmesan cheese
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Prepare containers: Spoon ¼ cup of the marinara sauce into one corner of each freezer-safe meal prep container to create a flavorful base.
  2. Assemble the bowls: Divide the frozen, unthawed cauliflower rice, broccoli, spinach, and bell peppers evenly among the containers. Add the cooked chicken on top and sprinkle Parmesan cheese over each bowl. No pre-cooking of vegetables is necessary.
  3. Freeze for storage: Cover the containers tightly, label each with the contents and date, then place them in the freezer for future meals.
  4. Reheat before serving: When ready to eat, microwave the meal prep bowl directly from frozen with the lid vented. Heat for 2 minutes, stir, then heat for an additional 2 minutes or until thoroughly warmed. Cooking times may vary depending on the microwave and container used. Before serving, top with shredded Mozzarella cheese and stir well.

Notes

  • No need to thaw vegetables before assembling the meal prep bowls.
  • Use any color bell peppers you prefer or have on hand.
  • Microwave timings may vary, so check the temperature before eating.
  • Parmesan and Mozzarella cheese add richness but can be adjusted or omitted for dietary preferences.
  • Freezer-safe containers with tight lids help preserve freshness and prevent freezer burn.
