Description

This Chicken Taco Pizza is a vibrant, flavorful fusion dish combining the zest of taco seasoning and toppings with the comfort of a cheesy pizza crust. Perfectly seasoned chicken, refried beans, and fresh veggies come together under a golden, melted cheese blanket, finished with fresh cilantro and a dollop of sour cream for a crowd-pleasing meal in just 30 minutes.

Ingredients

Main Ingredients

  • 2 teaspoons olive oil
  • 2 boneless, skinless chicken breasts (cut into bite-size pieces)
  • 1 ounce taco seasoning
  • 8 ounces taco sauce
  • 16 ounces pizza dough
  • 16 ounces refried beans (1 can)
  • 3 cups shredded Mexican cheese blend
  • ½ cup halved cherry tomatoes
  • ½ cup green bell pepper (chopped)
  • ¼ cup sliced olives
  • 2 scallions (sliced)
  • Fresh cilantro (for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 500°F and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook Chicken: Heat the olive oil in a large nonstick skillet over medium heat. Add the bite-sized chicken pieces and cook until browned on all sides, about 5 minutes.
  3. Season Chicken: Stir in the taco seasoning and taco sauce, and continue cooking the chicken until fully cooked through, approximately 5 more minutes. Remove from heat and set aside.
  4. Roll Dough: On a clean, lightly floured surface, roll out the pizza dough into either a rectangle or a 10-12 inch circle. Transfer the prepared dough onto the lined baking sheet.
  5. Spread Beans: Evenly spread the refried beans over the rolled-out pizza dough, creating a flavorful base layer for the toppings.
  6. Add Toppings: Sprinkle ¾ of the shredded Mexican cheese blend evenly over the beans. Next, layer on the cooked chicken, halved cherry tomatoes, chopped green bell pepper, sliced olives, and sliced scallions. Finally, sprinkle the remaining cheese on top to help everything melt together beautifully.
  7. Bake Pizza: Place the pizza in the preheated oven and bake for 10-12 minutes. Bake until the cheese is melted thoroughly and the crust turns a golden brown, indicating it is perfectly cooked.
  8. Garnish and Serve: Remove the pizza from the oven and garnish with fresh cilantro leaves. Serve with a dollop of sour cream on the side for added creaminess and flavor.

Notes

  • For a crispier crust, pre-bake the dough for 3-4 minutes before adding toppings.
  • You can substitute refried beans with black beans for a different texture and flavor.
  • Feel free to add jalapeños or hot sauce if you enjoy extra heat.
  • Make sure the chicken is cooked thoroughly to a safe internal temperature of 165°F (74°C).
  • Use freshly shredded cheese for better melting and flavor.
