Description

Chocolate Billionaires are irresistible candy clusters made with chewy caramel, crunchy pecans, crispy Rice Krispies, and coated in smooth milk chocolate. This no-bake treat combines sweet, salty, and crunchy textures into bite-sized delights that are perfect for parties, gifting, or indulging your sweet tooth at home.

Ingredients

Caramel Mixture

  • 1 package (14 ounces) caramels
  • 3 tablespoons water
  • 1 1/2 cups chopped pecans
  • 1 cup Rice Krispies

Chocolate Coating

  • 3 cups milk chocolate chips
  • 1 1/2 teaspoons shortening

Instructions

  1. Prepare your pans: Line two baking sheets with waxed paper and lightly grease them to prevent the candies from sticking as they cool and harden. Set them aside.
  2. Melt the caramel: In a large heavy saucepan over low heat, combine the caramels and water. Stir continuously until completely melted and smooth, which should take a few minutes. Then stir in the chopped pecans and Rice Krispies until everything is well coated.
  3. Form the candy clusters: Using a teaspoon or small cookie dough scoop, drop spoonfuls of the caramel mixture onto the prepared baking sheets, spacing them out slightly. Place the trays in the refrigerator for about 10 minutes to allow the clusters to firm up.
  4. Dip in chocolate: While the clusters chill, melt the milk chocolate chips and shortening together in the microwave, stirring every 30 seconds until smooth. Once the clusters are firm, dip each one into the melted chocolate, coating all sides thoroughly. Allow excess chocolate to drip off before placing them back onto the waxed paper-lined trays.
  5. Set and store: Refrigerate the chocolate-coated candies until the chocolate is fully set, about 15 to 20 minutes. After the chocolate has hardened, transfer the candies to an airtight container for storage.

Notes

  • Use a small cookie dough scoop for consistent cluster sizes.
  • Ensure continuous stirring while melting caramel to avoid burning.
  • Chilling the clusters before dipping helps them hold their shape.
  • Store in an airtight container in the refrigerator to keep candies fresh.
  • Shortening helps create a smooth, shiny chocolate coating.
