Description

Chocolate Billionaires are decadent no-bake candy clusters featuring chewy caramel, crunchy pecans, and crispy Rice Krispies, all coated in smooth milk chocolate. This easy-to-make treat offers a perfect balance of textures and rich, buttery flavors, ideal for gifting or indulging at home.

Ingredients

Caramel Mixture

  • 1 package (14 ounces) caramels
  • 3 tablespoons water
  • 1-1/2 cups chopped pecans
  • 1 cup Rice Krispies cereal

Chocolate Coating

  • 3 cups milk chocolate chips
  • 1-1/2 teaspoons shortening

Instructions

  1. Prepare your pans: Line two baking sheets with waxed paper and lightly grease them to prevent the candies from sticking as they cool.
  2. Melt the caramel: In a large, heavy saucepan over low heat, combine the caramels and water. Stir continuously until the caramel is fully melted and smooth, which may take a few minutes. Once melted, stir in the chopped pecans and Rice Krispies, ensuring everything is thoroughly coated.
  3. Form the candy clusters: Drop teaspoonfuls of the caramel mixture onto the prepared baking sheets, spacing them slightly apart. Refrigerate for about 10 minutes to let the clusters firm up. Using a small cookie dough scoop can help with even portioning.
  4. Dip in chocolate: While the clusters chill, melt the milk chocolate chips with the shortening in the microwave, stirring every 30 seconds until smooth. Once clusters are firm, dip each into the melted chocolate to coat all sides. Allow excess chocolate to drip off before placing them back on the waxed paper.
  5. Set and store: Refrigerate the coated candies until the chocolate fully sets, approximately 15 to 20 minutes. Once set, transfer them to an airtight container for storage.

Notes

  • Using a cookie dough scoop makes portioning easier and creates uniform clusters.
  • Shortening helps the chocolate coating stay smooth and shiny.
  • Store the candies in an airtight container in the refrigerator for up to two weeks.
  • To soften caramels faster, chop them into smaller pieces before melting.
