Description
Delicious and healthy Chocolate Brownie Date Balls made with walnuts, Medjool dates, pumpkin purée, and cocoa powder. These no-bake treats combine wholesome ingredients for a rich, fudgy taste without refined sugars, perfect for a quick snack or guilt-free dessert.
Ingredients
Nut Mixture
- 3/4 cup walnuts (2.6 oz total)
Date Brownie Mixture
- 10 pitted Medjool dates
- ¼ cup canned or homemade pumpkin purée
- Pinch sea salt
- 1/4 cup unsweetened cocoa powder (Dutch process preferred)
- ½ teaspoon vanilla extract
Instructions
- Prepare coarse walnut coating: Place 1/3 cup of the walnuts in a food processor fitted with a metal blade. Process until the nuts resemble coarse sand. Transfer this to a small bowl and set aside for coating later.
- Grind remaining walnuts: Add the remaining walnuts to the food processor and pulse until finely ground, creating the base nut texture for the brownie balls.
- Add wet and dry ingredients: To the finely ground walnuts in the processor, add the pitted dates, pumpkin purée, unsweetened cocoa powder, a pinch of sea salt, and vanilla extract.
- Process into smooth mixture: Blend all ingredients thoroughly until the mixture is smooth and well combined, forming a sticky, chocolatey dough.
- Shape into balls: Using a spoon or your hands, scoop the mixture and roll into 8 equal, golf-ball-sized balls.
- Coat walnut balls: Roll each ball in the reserved coarsely chopped walnuts to add texture and a nutty finish.
- Serve or store: Enjoy immediately, or store the balls in the refrigerator or freezer to keep fresh for later snacking.
Notes
- Use Medjool dates for natural sweetness and soft texture.
- The pumpkin purée adds moisture and a subtle flavor; canned or homemade both work well.
- Store date balls refrigerated for up to one week or frozen for up to one month.
- Rolling the balls in toasted walnuts adds crunch and enhances the flavor.
- This recipe is naturally gluten-free and can be suitable for vegan diets if you ensure vanilla extract is vegan-friendly.
