- Mix Egg Yolks and Sugar: In a medium bowl, whisk the egg yolks together with 1/4 cup of granulated sugar by hand until the mixture is well combined and slightly thickened.
- Add Cream and Chocolate: Stir the room temperature heavy cream into the egg yolk mixture, then pour in the melted chocolate. Mix gently but thoroughly until fully incorporated.
- Portion into Ramekins: Divide the chocolate custard mixture evenly between two 6-ounce ramekins. Place the ramekins inside a baking dish.
- Create the Water Bath: Carefully pour the boiling water into the baking dish until it reaches halfway up the sides of the ramekins. This helps cook the custard gently and evenly.
- Bake the Custards: Transfer the baking dish to the oven and bake for 40-44 minutes. The custards should be set around the edges but will jiggle slightly in the center when gently shaken.
