Description

Chocolate-Dipped Coconut Macaroons combine the rich, creamy sweetness of condensed milk and coconut flakes with the decadent touch of semisweet chocolate. Ingredients

Macaroon Base

  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2/3 cup flour
  • 5 1/2 cups sweetened coconut flakes (from 14 ounce bag)
  • 1/4 teaspoon kosher salt

Chocolate Coating

  • 6 ounces semisweet chocolate melting disks


Instructions

  1. Prepare the Macaroon Mixture: In a mixing bowl, combine the sweetened condensed milk with vanilla and almond extracts, stirring well. Then add the flour, coconut flakes, and kosher salt and mix thoroughly until all ingredients are well incorporated.
  2. Refrigerate Mixture: Cover the bowl and refrigerate the macaroon mixture for one hour to allow it to firm up, making it easier to scoop and shape.
  3. Scoop and Bake: Preheat your oven to 350°F (175°C). Use an ice cream scoop to portion out 18 equal-sized macaroons onto a parchment-lined baking sheet. Bake for 15 minutes until the edges are lightly golden.
  4. Cool Macaroons: Remove the baking sheet from the oven and allow the macaroons to cool completely on the parchment paper to firm up before dipping.
  5. Melt the Chocolate: Place the semisweet chocolate melting disks in a microwave-safe bowl and melt in 30-second increments, stirring after each, until the chocolate is completely smooth and melted.
  6. Dip Macaroons in Chocolate: Dip the bottom half-inch of each cooled macaroon into the melted chocolate, then set them back on the parchment paper. Allow the chocolate to harden at room temperature or in the refrigerator for quicker setting before serving.
