Description

This Creamy Coconut Key Lime Pie Smoothie is a refreshing and nutritious blend inspired by the classic dessert. Made with frozen banana, lime zest and juice, Greek yogurt, coconut milk, and fresh spinach, it's a perfect balance of indulgence and health. The graham cracker rim, whipped cream, and toasted coconut topping make it feel like a treat, while the sneaky veggies and protein keep it wholesome. Ideal for breakfast, a snack, or a healthy dessert.

Ingredients

Main Smoothie Ingredients

  • 1 large frozen ripe banana, sliced
  • Zest from 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt (use coconut-based yogurt to keep it dairy free)
  • ½ cup light coconut milk (or milk of choice)
  • ½ cup fresh spinach
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey to sweeten if necessary

For Serving

  • Extra lime wedge, for rimming glass
  • Graham cracker crumbs
  • Whipped cream
  • Shredded toasted coconut

Instructions

  1. Prep the Glass: Add crushed graham crackers to a small plate. Wet the rim of your serving glass with a lime wedge, then dip and roll the rim in the graham cracker crumbs until well coated. Set aside.
  2. Blend Ingredients: Place frozen banana slices, lime zest, lime juice, vanilla Greek or coconut yogurt, light coconut milk, fresh spinach, and vanilla extract into a high-powered blender. Blend until smooth and creamy. If the smoothie is too thick, add more milk to thin it out to your desired consistency.
  3. Adjust Sweetness: Taste the smoothie and if it needs additional sweetness, blend in 1-2 teaspoons of maple syrup or honey. If using vanilla yogurt, extra sweetener is often unnecessary.
  4. Serve: Pour the smoothie into the prepared glass with the graham cracker rim. Top with a generous dollop of whipped cream and sprinkle with shredded toasted coconut for a finishing touch.

Notes

  • Using frozen banana helps achieve a creamy and thick smoothie texture.
  • Substitute the vanilla or coconut yogurt with dairy-free yogurt to keep it vegan and dairy-free.
  • Fresh spinach adds nutrients without changing the vibrant flavor.
  • Optional sweetener can be adjusted to taste, especially if using plain yogurt.
  • Double the recipe to serve more people easily.
