Description
Deliciously rich and creamy Coffee Truffles that combine the smoothness of cream cheese or coconut butter with the bold flavor of instant coffee and chocolate. Perfect as a quick no-bake treat or elegant dessert bite, these truffles are easy to make in just 10 minutes and can be customized with your choice of sweeteners and chocolate.
Ingredients
Main Ingredients
- 4 oz cream cheese or coconut butter
- 2 tbsp butter, or additional coconut butter
- 3 tbsp powdered sugar or erythritol
- 1/2 tsp instant coffee
- 3 oz chocolate chips or broken up chocolate (optional)
Instructions
- Soften Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature to ensure they are soft enough to combine smoothly.
- Mix Ingredients: Combine all ingredients including powdered sugar (or erythritol) and instant coffee until smooth. Using a hand mixer will yield the smoothest consistency, but stirring with a fork works fine and tastes great.
- Shape the Truffles: Spread the mixture into a container or chill in the freezer for a few minutes until firm enough to scoop. Use a mini cookie scoop to form balls onto a parchment-lined plate.
- Freeze and Firm Up: Place the shaped truffles into the freezer until firm.
- Optional Chocolate Coating: Melt the chocolate chips, optionally stirring in half a teaspoon of oil for smoothness. Dip the firm truffles into the melted chocolate. Once chocolate sets, you can cut the truffles in half if desired.
- Store Leftovers: Refrigerate or freeze any leftovers to maintain freshness.
Notes
- You can substitute cream cheese with coconut butter for a dairy-free option.
- Use erythritol to make these truffles diabetic-friendly and lower in sugar.
- Dipping in melted chocolate is optional but adds an indulgent touch.
- Adding oil to melted chocolate improves coating smoothness but is not necessary.
- Store truffles in the freezer or refrigerator to keep them firm.
