  • 4 oz cream cheese or coconut butter
  • 2 tbsp butter, or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • 1/2 tsp instant coffee
  • 3 oz chocolate chips or broken up chocolate (optional)


Instructions

  1. Soften Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature to ensure they are soft enough to combine smoothly.
  2. Mix Ingredients: Combine all ingredients including powdered sugar (or erythritol) and instant coffee until smooth. Using a hand mixer will yield the smoothest consistency, but stirring with a fork works fine and tastes great.
  3. Shape the Truffles: Spread the mixture into a container or chill in the freezer for a few minutes until firm enough to scoop. Use a mini cookie scoop to form balls onto a parchment-lined plate.
  4. Freeze and Firm Up: Place the shaped truffles into the freezer until firm.
  5. Optional Chocolate Coating: Melt the chocolate chips, optionally stirring in half a teaspoon of oil for smoothness. Dip the firm truffles into the melted chocolate. Once chocolate sets, you can cut the truffles in half if desired.
  6. Store Leftovers: Refrigerate or freeze any leftovers to maintain freshness.
