Cowboy Caviar Delight is a vibrant and refreshing no-cook dip that combines the wholesome goodness of black beans, sweet corn, fresh veggies, and creamy avocado with a zesty lime and apple vinegar dressing.   • 15 oz. black beans (drained and rinsed)
  • 15.25 oz. whole kernel sweet corn (drained)
  • 1 small red bell pepper (diced)
  • 1 jalapeno pepper (minced)
  • 1/3 cup fresh cilantro (finely chopped)
  • ¾ cup diced red onion
  • 2 avocados (diced)

Dressing Ingredients

  • ¼ cup lime juice
  • 2 tablespoons apple vinegar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 Tablespoon honey
  • ¼ teaspoon chili powder


Instructions

  1. Prepare the dressing: In a small bowl, combine lime juice, apple vinegar, salt, ground black pepper, honey, and chili powder. Stir well until the honey is fully dissolved and set the dressing aside to let the flavors meld.
  2. Combine dip ingredients: In a large mixing bowl, add the drained and rinsed black beans, sweet corn, diced red bell pepper, minced jalapeno, chopped fresh cilantro, diced red onion, and diced avocados.
