- ½ cup golden raisins
- 1 cup sliced almonds

- 2 cups mayonnaise
- ½ cup seasoned rice vinegar
- 2 tablespoons curry powder
- ¼ cup apricot preserves
- 2 tablespoons sugar
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Prepare the Salad Ingredients: In a large mixing bowl, combine 2 ½ pounds of cooked and shredded boneless skinless chicken breasts, 8 green onions cut diagonally into thin slices, 2 ribs of celery sliced thinly, 1 diced red apple, 1 cup dried cranberries, ½ cup golden raisins, and 1 cup sliced almonds. Mix gently to distribute all ingredients evenly.
- Make the Dressing: In a small bowl, whisk together 2 cups of mayonnaise, ½ cup seasoned rice vinegar, 2 tablespoons curry powder, ¼ cup apricot preserves, 2 tablespoons sugar, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper until smooth and well combined.
