  • 2 ½ pounds boneless skinless chicken breasts, cooked and shredded (about 4 chicken breasts)

  • 1 cup dried cranberries
  • ½ cup golden raisins
  • 1 cup sliced almonds

Dressing Ingredients

  • 2 cups mayonnaise
  • ½ cup seasoned rice vinegar
  • 2 tablespoons curry powder
  • ¼ cup apricot preserves
  • 2 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper


Instructions

  1. Prepare the Salad Ingredients: In a large mixing bowl, combine 2 ½ pounds of cooked and shredded boneless skinless chicken breasts, 8 green onions cut diagonally into thin slices, 2 ribs of celery sliced thinly, 1 diced red apple, 1 cup dried cranberries, ½ cup golden raisins, and 1 cup sliced almonds. Mix gently to distribute all ingredients evenly.
  2. Make the Dressing: In a small bowl, whisk together 2 cups of mayonnaise, ½ cup seasoned rice vinegar, 2 tablespoons curry powder, ¼ cup apricot preserves, 2 tablespoons sugar, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper until smooth and well combined.
