For Garnish

  • Pepitas (or roasted pumpkin seeds)
  • Red pepper flakes
  • 2 slices toasted French baguette


Instructions

  1. Sauté onions: In a heated saucepan with olive oil, add the finely chopped yellow onions and sauté over low heat until translucent, taking care not to brown them.
  2. Add pumpkin and spices: Stir in the homemade pumpkin purée, then sprinkle the granulated garlic, cayenne powder, red pepper flakes, cumin, and coriander. Mix thoroughly to combine all the spices evenly with the pumpkin.
  3. Simmer soup: Pour in the low sodium vegetable broth and bring the mixture to a gentle boil for about 3 minutes. Lower the heat and allow the soup to simmer for 20 minutes so the flavors meld and the broth slightly thickens.
  4. Season: Add kosher salt and ground black pepper according to taste. Adjust heat by adding more cayenne and red pepper flakes if desired.
