Description

This creamy and delicious Spinach Artichoke Dip is a perfect appetizer for gatherings or casual snacking. Made with a blend of cream cheese, sour cream, mayonnaise, parmesan, and mozzarella cheeses combined with tender spinach and artichokes, it bakes until hot and bubbly. Serve warm alongside tortilla chips, crackers, or toasted baguette slices for a crowd-pleasing treat.

Ingredients

Cheese and Dairy

  • 8 oz. cream cheese, well softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2/3 cup (76g) finely shredded parmesan cheese
  • 1/2 cup (56g) finely shredded mozzarella cheese

Vegetables and Flavorings

  • 1 garlic clove, minced (approximately 1 tsp)
  • 1 (14 oz) can quartered artichoke hearts, liquid drained, squeezed to remove excess liquid, chopped
  • 6 oz. frozen spinach, thawed and squeezed to remove excess liquid
  • Pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly spray a small 1-quart baking dish with non-stick cooking spray to prevent sticking.
  2. Combine Dairy and Cheese: In a mixing bowl, stir together the softened cream cheese, sour cream, mayonnaise, minced garlic, shredded parmesan, shredded mozzarella, and pepper until smooth and well combined.
  3. Add Vegetables: Fold the chopped artichoke hearts and drained spinach into the cheese mixture, ensuring they are evenly incorporated.
  4. Bake the Dip: Spread the combined mixture evenly into the prepared baking dish. Bake in the preheated oven for about 20 minutes or until the dip is heated through and melted.
  5. Serve: Remove from oven and serve the dip warm with your choice of tortilla chips, crackers, or toasted baguette slices for dipping.

Notes

  • Make sure to squeeze out excess moisture from the spinach and artichokes to prevent a watery dip.
  • You can prepare the mixture ahead of time and refrigerate it before baking.
  • For a spicier kick, add a pinch of crushed red pepper flakes or a dash of hot sauce.
  • Use fresh garlic if possible for better flavor.
  • Try serving with fresh vegetable sticks as a low-carb option.
