Description

  • 1 cup old-fashioned oats
  • 2 cups milk (any type, dairy or plant-based)
  • Pinch of salt

Flavoring

  • 1/2 cup mashed sweet potato
  • 1/4 teaspoon cinnamon or pumpkin spice
  • 2 teaspoons brown sugar (optional for topping)


Instructions

  1. Prep: Scoop 1/2 cup of cooked sweet potato onto a plate and mash it thoroughly with the back of a fork until smooth and no large chunks remain. Alternatively, you can use prepared mashed potatoes or about 4 ounces of mashed sweet potato baby food.
  2. Cook the oats: In a small saucepan, combine the oats, milk, and a pinch of salt. Place over medium heat and stir constantly for about 5 minutes until the mixture is hot and the oats start to soften.
  3. Incorporate sweet potato: Add the mashed sweet potato to the hot oat mixture and stir well. Continue cooking and stirring for another minute or until the oats have absorbed the liquid and the sweet potato is fully mixed in and warm throughout.
  4. Add spices: Sprinkle the cinnamon or pumpkin spice over the oatmeal and stir to evenly distribute the flavor.
  5. Serve: Divide the creamy sweet potato oatmeal into two bowls. Optionally, sprinkle brown sugar and an additional pinch of cinnamon on top to enhance sweetness and flavor before serving.

Notes

  • You can use any milk of your choice such as cow's milk, almond milk, oat milk, or soy milk.
  • If you want a vegan or dairy-free version, use plant-based milk and skip brown sugar or substitute with maple syrup.
