Description

This comforting Turkey Casserole combines tender egg noodles, savory cooked turkey, creamy chicken soup, and melted cheddar cheese with peas and carrots, baked to a golden bubbly finish. Perfect for an easy weeknight meal that serves the whole family.

  • 12 ounces egg noodles (uncooked)
  • 4 cups chopped cooked turkey
  • 2 10-ounce cans cream of chicken soup
  • 1 cup milk
  • 2 1/2 cups shredded cheddar cheese (divided use)
  • 1 1/2 cups frozen peas and carrots (or frozen mixed vegetables)

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons parsley (chopped)
  • Cooking spray


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees F and coat a 9"x13" baking dish with cooking spray to prevent sticking.
  2. Cook Noodles: Boil the egg noodles in salted water following the package directions until al dente. Drain and set aside.
  3. Mix Ingredients: In a large mixing bowl, combine the cooked egg noodles, chopped cooked turkey, cream of chicken soup, milk, 1 cup of shredded cheddar cheese, frozen peas and carrots, garlic powder, onion powder, salt, and pepper. Stir thoroughly until well blended.
  4. Assemble Casserole: Transfer the mixture to the prepared baking dish. Evenly sprinkle the remaining 1 1/2 cups of shredded cheddar cheese over the top.
  5. Bake Covered: Cover the dish with aluminum foil and bake for 25 minutes, or until the casserole is heated through.
  6. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, allowing the cheese on top to melt and become slightly golden.
  7. Garnish and Serve: Once baked, sprinkle the chopped parsley over the casserole for a fresh finish. Serve hot and enjoy!
