Ingredients
Bean Filling
- 16 ounce can refried beans (pinto or black)
- 1 Tablespoon salsa
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
Additional Ingredients
- 1/2 cup shredded Mexican blend cheese (or cheddar cheese)
- 6 medium flour tortillas
- Salsa (for dipping)
- 1-2 tablespoons oil (for frying)
Instructions
- Prepare the bean mixture: Add the refried beans, salsa, chili powder, garlic powder, and cumin to a mixing bowl and stir until smooth and well combined.
- Assemble the burritos: Spoon about three tablespoons of the bean mixture onto the center of each flour tortilla and spread into a thin, even layer. Sprinkle with a small handful of shredded cheese. Roll the tortillas tightly around the filling.
- Heat the oil: In a large saucepan, heat 1 to 2 tablespoons of oil over medium-high heat until shimmering and hot.
- Cook the burritos: Place a few burritos seam side down in the hot pan. Cook, turning every 30 seconds or so, until the tortillas are golden and crispy on all sides, ensuring the cheese melts and the inside is heated through.
- Serve warm: Remove the burritos from the pan and serve immediately while warm, accompanied by homemade five-minute salsa and guacamole for dipping.
Notes
- Be careful when turning the burritos to keep them sealed and avoid spilling the filling.
- You can customize the filling by adding cooked vegetables or your favorite hot sauce.
- Use a nonstick skillet for easier cooking and cleaning.
- Leftover burritos can be reheated in a skillet or oven to maintain their crispiness.
